MasterChef winner Dr Saliha Mahmood Ahmed is publishing Foodology with Hodder, combining her love of food and her career as a gastroenterologist in the NHS.
The book will publish on 13th May 2021, after the deal for world rights in all languages was agreed with agent Heather Holden Brown at the HHB Agency.
After winning "MasterChef" in 2017, Dr Ahmed penned the Indo-Persian cookbook Khazana with Hodder, which went on to win the Observer Food Monthly Best New Cookbook 2019.
Her new book brings together her love of cooking with know-how from her job working as a gastroenterologist in the NHS as "an exploration of the science behind our love of food, taking the reader on a culinary and biological journey from the first bite all the way through our gut".
The synopsis reads: "From why certain flavours excite your taste buds and how we taste, to why we love crunch, using umami, the world of spices, and why we favour particular flavours, to what happens when you digest, why some foods make you bloat and what we can do to feed our gut bacteria, this is a food lover’s guide to how we eat and why we enjoy it."
The book will contain 50 new recipes, enabling readers to put their new learning into practice and experiment with flavour, taste and texture.
Dr Ahmed said: "The love for food, cooking and eating is central to 21st-century life and is the ultimate expression of self-care. Foodology is a very personal project for me, that bridges the gap between joyous gastronomy and eating to optimise one’s digestive health. It has the power to transform your life, one bite at a time."
